Vegan Macadamia Lace Cookies

It is time for some yummy cookies! These macadamia nut thin cookies are delicious and especially for being vegan. Try making them at home :) they are great for adding to ice cream for a nice crispy sweet treat or just enjoying on their own.
















Macadamia Lace Cookie Recipe
1/2 C brown sugar, light pack
3 Tbsp Canola Oil
1/4 C Maple Syrup or Agave
1 Tbsp Water
1 tsp Vanilla Extract
1/3 C all-purpose flour
1/2 tsp Cornstarch
1/8 tsp Salt
1/2 C Roasted unsalted macadamias (pulse to coarse bits through food processor)




Directions
1. Preheat oven to 350 F.
2. Line two parchment baking sheets with parchment paper
3. Combine sugar, oil, syrup, and water in a bowl. Mix vigorously, then stir in the vanilla.
4. Add flour, cornstarch, and salt to previous steps mix and combine well.
5. Fold in the macadamias
6. Drop 6 tablespoons of batter onto parchment 3 inches apart. Try to bake these in sixes as they do spread a lot.
7. Bake for 6-8 minutes. Be careful not to burn them.
8. Remove from oven and let sit on the baking sheet to cool for about 5-10 minutes
9. Take parchment paper and transfer to a cooling wrack. DO NOT try to lift the cookies until they are 100% cool. Store in a tightly sealed container :)




ALL DONE , let them cool completely & then ENJOY :)
